Elizabeth McCollum

Elizabeth McCollum is the Regional Vice President of Operations for Outback Steakhouse at Bloomin’ Brands. She leads over 100 restaurants and 7,000 Outbackers in the states of Florida, Alabama, Mississippi, Tennessee and Arkansas. In this role, Elizabeth is responsible for all day-to-day and long-term restaurant operations including sales and profit management, customer satisfaction, overall food quality, employee and community relations.

Before joining Bloomin’ Brands, Elizabeth was the RVP of Operations for LongHorn Steakhouse at Darden Restaurants, and Senior Director of Operations Excellence. Before transitioning to restaurant operations leadership, Elizabeth was Director of Finance for LongHorn, worked in Olive Garden finance and had a project assignment in human resources. She came to Darden from Rodale Press, where she held positions in marketing, consumer research and new media business development for Runner’s World, Bicycling, Backpacker, Prevention and Men’s Health magazines. She also held the position of Vice President of Operations at Erbach Communications Group in Jersey City, NJ, and worked at Musselman Advertising just out of college.

Elizabeth holds a BS in marketing from the Pennsylvania State University and an MBA from the Wharton School of Business at the University of Pennsylvania. She is married to Floyd McCollum, AIA, for 25 years this September and has a 22 year old son who is a student at UCF. During free time, Elizabeth enjoys learning about and helping others successfully navigate the world of personal finance. In her hometown of Celebration, FL, she’s been involved with the homeowner’s association and the covenants committee and is a passionate advocate of new urbanism.
